Dried Persimmons Facts
Dried persimmons are a type of traditional dried fruit snack in East Asia. Known as shìbǐng in Chinese, hoshigaki in Japanese, and gotgam in Korean, it is traditionally made in the late autumn and winter, by air drying Oriental persimmon. Dried Persimmon is consumed out of hand and is also used to make wine, put in traditional tea, and favored as a sweetener for baked goods, desserts, and appetizers.
The dried persimmons are also used as decorations during New Year celebrations in Japan and Korea. Hoshigaki can be seen strung in windows, along covered porches and in well-ventilated rooms as a symbol of longevity and good luck. Some Japanese and Korean families also send dried persimmon to friends and relatives as a gesture of goodwill.

Records show that Gongcheng Dried Persimmons was first made during the Ming Dynasty period, and from that time on, Gongcheng Dried Persimmon had been flavored as Imperial tribute. Dried persimmons are developed through a labor-intensive process of peeling, putting onto sieve evenly, left to air drying for 5 to 6 weeks. As the fruits are drying, they must be hand turned repeatly to soften the flesh, and over time, they develop a soft, dense, sticky, and chewy consistency distinct from dried persimmons made in China.
There will be produced a white bloom on the surface of dried persimmon, a natural coating of sugar, and this bloom is one of the traits that signals the dried fruits are ready for consumption.
